320g caster sugar
juice & zest of 2 lemons
560g self raising flour
pinch of salt
few drops of vanilla essence
mix together flour, sugar, salt & margerine. whisk together eggs, vanilla & milk. mix everything together, beating well. fold in lemon juice and lemon zest. beat well.
grease a baking tin and pour in once well beaten, leaving space for it to rise. this recipe makes rather a lot of mixture, i actually got 2 smaller loaves as opposed to one large one.
bake on gas mark 4 for around 30 minutes, then keep checking (cooking time depends on size of pan/amount of mixture). make sure it's thoroughly cooked inside, mine was perfect on top and still gooey inside, i have a certain knife i stick in to check, if it comes out clean it's cooked. if not, leave it another 10 mins & check again!
i made this last night and it's super moreish! not too sweet, just lovely :)
